Crispy Coconut Chicken and Grilled Stuffed Zucchini
We had crispy coconut chicken fingers and grilled stuffed zucchini for dinner tonight. These were delicious. I have found my new favorite way to make zucchini. I gave the zucchini a 9, and everyone else thought it was a 7 or 8, but since my kids didn't complain about eating zucchini, I consider that a definite success. I cut the recipe in half, and we made the zucchini 4 portions, and the calories were 150/serving. The chicken fingers needed sauce, and I didn't want to make it, so we gave the chicken fingers an 8. Everyone thought they were great, just needing a little sauce. I think next time I will put less curry powder in, and definitely make the sauce recommended in the recipe. The calories for two chicken strips were 275 calories. This was a light, yummy dinner, and I'm glad we all enjoyed it! Tomorrow we're trying a new kind of french toast and having popcorn chicken.

This zucchini looks really delicious. I would leave out the sausage for your dad, but it would be a nice change. Thanks for sharing. I looked at the chicken recipe, also. I will let you know what I think after I prepare them. Love me
