CJ's Spiced Banana Pancakes from Flour 2

These are a great, easy breakfast that we tried one morning, and the boys and I really enjoyed them.  I found them in my Flour 2 cookbook.  The pancakes are quick to put together, and since there is so much banana in them, they are super moist, sweet and kind of healthy :).  The allspice is kind of strong, I love allspice, but maybe play around with the spices if you don't like allspice.  Noah and I gave them a 9, and Owen gave them an 8 because of the allspice.  Each pancake, for 11 pancakes, was 135 calories, and here's what to do:

1 c flour
2 t baking powder
1/4 t salt
1 1/2 t allspice
1/4 t pepper (you can use more, I didn't want very much, but the recipe called for more)
2 T packed brown sugar
1 egg
1 c milk (I used 1%)
2 T vegetable oil
4 medium ripe bananas, 3 chopped up or mushed up, 1 sliced to go on top
Syrup, butter, etc. for toppings

Whisk together the flour, baking powder, slat, allspice, pepper, and brown sugar.  In another bowl, whisk together the egg, milk and vegetable oil.  Add in the mushed up banana, then fold the wet ingredients into the dry ones.  Cook at a low heat on a griddle or pan, and brown well on both sides.  Serve with banana slices and toppings.

Pioneer Woman's Strawberry Granola Pancakes

Another link to a recipe, here's Pioneer Woman's pancake recipe.  This is a great way to use up granola :), which I seem to always need to do!
Depending on which pancake/muffin mix you use, your recipe and calorie count will be different, but I used Martha White's Strawberry Muffin Mix, and we only were able to make 10 pancakes out of that.  Each pancake was 133 calories.  We loved these, they are fast and delicious, and the strawberries give it a nice flavor.  Aaron and I gave these a 9, and the boys gave them a perfect 10.  We'll be having them again soon.

Cake Batter Pancakes

So we found these delicious pancakes at tastykitchen.com, I love that site, and we loved these.  The boys gave these a perfect 10, and Aaron and I gave these a 9.  Each pancake was only 78 calories each, because this made a lot, and there is no oil or butter in this recipe, which cuts down on the calories.  Anyway, I followed the recipe exactly, I just didn't make the glaze, which would probably be even more delicious, because my family always says they just want syrup, sigh :).  Try these, they are great!

Citrus Ricotta Pancakes

This was voted the boys', especially Noah's, favorite pancakes.  He liked how soft they were, and they both loved the orange taste.  These are really easy, and a great way to use up left over ricotta from other recipes.  I found this recipe on tasty kitchen, and I followed it exactly.  Each pancake was 102 calories, leaving out the butter for cooking the pancakes.  Anyway, easy and delicious!  Aaron and I gave them an 8, Owen a 9, and Noah a perfect 10.

Picky Palate's Strawberry Buttermilk Pancakes with Nutella Syrup

I found this recipe for Strawberry Buttermilk Pancakes with Nutella Syrup at Picky Palate's website, and since I bought my strawberries for $.87 per pound, I had a lot and wanted to try some new things.  This was incredibly delicious, none of us could get enough, and although they aren't chocolate chip pancakes, Aaron still gave them an 8.  The boys and I gave them a perfect 10, and with the chocolatey buttermilk syrup, these are worth every bit of their 256 calories.  That includes the pancake and syrup.  Anyway, these are sooooo amazing, I'll be making them again when I have more Nutella :).

Pioneer Woman's Red (or not :)) Velvet Pancakes

Happy Valentine's Day tomorrow!  Red Velvet Pancakes from The Pioneer Woman's newest cookbook are yummy and perfect for your Valentine :).  This recipe was a hit with my boys, not so much with my true Valentine Aaron, but regardless these are good and easy.  I felt like there was too much baking powder, they had that bitter taste that comes from too much baking powder, and I added more cocoa powder, but mostly followed the directions.  Also, I didn't use maple syrup, I used vanilla and almond extracts. Each pancake with syrup was 184 calories, and the recipe made 22 pancakes or us.  Aaron gave them a 6, I gave them an 8, ad Owen and Noah gave them a perfect 10.  Here's the easy peasy recipe.  Make them red if you desire, I just really don't like using food coloring very much :).

3 c flour
3 T baking powder
2 T sugar
1 t salt
2 T cocoa powder
1 1/2 c almond milk
1 c buttermilk
2 large eggs
1 T vanilla
2 t white vinegar
4 T butter, melted

Syrup:
2 1/2 c powdered sugar
dash of salt
4 T butter, melted
1/4 c buttermilk
1/4 c almond milk
1 1/2 T corn syrup
1/2 T vanilla and almond extracts, mixed, mostly vanilla

Whisk together flour, baking powder, sugar, salt, and cocoa powder.  Set aside.  Mix together almond milk, buttermilk, eggs, vanilla, and vinegar.  Stir the wet ingredients into the dry until just combined, then add in the butter and cook on a heated griddle.
Whisk together the icing/syrup ingredients, then pour over your pancakes and enjoy!

Our Best Bites Mini Oven Pancakes

These mini puffed oven pancakes from Our Best Bites were a hit with my family, and I appreciated how easy they were.  I followed the recipe with the decrease in flour she suggests, because I found the recipe in their cookbook and that is how the recipe was printed.  Since I followed the recipe exactly, I will let you go to the link to see the recipe.  The calories for one puffy pancake was 35 calories since I only got 20 out of the recipe rather than 24.  The calories are 29 per pancake if you make 24.  We all gave this a 9, these are fun to dip and taste great!

Yogurt Pancakes

My sister Sonia and her husband went to a bed and breakfast in Utah and had these pancakes, which are really good, and Joe asked for the recipe, which the B&B kindly gave him.  They have shared the recipe with me, and now I am sharing them with you :).  These made 18 pancakes for us, and each pancake was 95 calories using skim milk and Greek yogurt.  Use any flavor yogurt to get new pancakes each time.  Grandma was here with us, and she and I gave them a 9, Noah gave them an 8, and Owen and Aaron gave them a 7 because although they liked them, they wanted chocolate chip pancakes.  Oh well :).
 
 
Yogurt Pancakes
 
Sonia and Joe
2 eggs    2 cups flour
1 ¼ cups milk    3 T sugar
2 T oil    2 tsp baking powder
7 oz yogurt, any flavor    ½ tsp salt
1/8 tsp baking soda
 
Mix all wet ingredients and then add dry ingredients, beating just until mixed. If too thick, add a little more milk. Cook like normal pancakes. Very yummy and moist. Will go further than regular pancakes.

Chickpea Pancakes with Ginger Apple Compote

 We had chickpea pancakes with ginger apple compote for a breakfast for dinner meal the other night, and I like that these pancakes are a little healthy :)  Noah and I gave them an 8, Aaron and Owen gave them a 7, but everyone liked the pancakes better by themselves except for me.  I love fruit topping on my pancakes, but not the rest of the family.  Without the apples, everyone gave the pancakes a higher score.  Sigh...:)  With the fruit topping included, we made 21 pancakes and each pancake with the fruit was 103 calories.  Without the fruit topping each pancake was 93 calories.  This was an easy recipe, I just threw everything in the food processor instead of just processing the chickpeas, so the preparation was a breeze.

 

FOR THE PANCAKES:
1-½ c flour
1 T Baking Powder
¾ t Salt
1 can (16 Oz. Can) Chickpeas
1 c Applesauce, No Sugar Added
1 c Milk
Eggs
1 T Honey
4 T Butter, Melted
1 t Vanilla Extract

FOR THE COMPOTE:
2 whole Apples
1 t Fresh Ginger
¼ t Vanilla Extract
2 T Brown Sugar
¾ c Water

In a small bowl, combine all dry ingredients (flour, baking powder, salt).
Drain and rinse the chickpeas.
Place the chickpeas in a large bowl and mash. You can also use a blender or food processor but make sure not to over puree.
Add the rest of the wet ingredients (applesauce, milk, eggs, honey, butter, vanilla) to the chickpeas and mix well.
Add the dry ingredients to the wet and stir until just combined.
Cook pancakes.
To make the ginger apple compote, peel, core and dice the apples. Peel and grate the ginger using a microplaner. If you wish, you can substitute fresh ginger for 1/2 teaspoon dried ground ginger.
In a saucepan, add the apples, ginger, vanilla extract, sugar and water. Bring to a boil. Reduce to medium and simmer for 10 to 15 minutes until apples are cooked, water has reduced and the consistency is thick. Pour over pancakes and serve

Vanilla Cake Batter Pancakes

We had Vanilla Cake Batter Pancakes tonight, and they were a hit.  The only problem we had with them is that they didn't stay together as well as normal pancakes, but they tasted great and were fast and easy to make.  We all enjoyed them, and had blackberries and whipped cream with them.  These are definitely worth trying!

Puffy Baked Pancake

We had such a great dinner yesterday, and sorry it didn't get posted yesterday as well.  I fell asleep instead :).  We had breakfast for dinner, and we found the recipe at tastykitchen.com.  It's called a Puffy Baked Pancake, and Aaron gave it a 9, and the boys and I gave it a perfect 10.  It's cruncy and chewy, has great flavor, and is so easy.  It takes about 2 minutes to come together, and then it bakes for 30 minutes, so you don't have to worry about it.  I made a few changes to the recipe, in addition to the cinnamon, I added some brown sugar and vanilla, and I left out the nutmeg.  Aaron commented it tasted kind of like a churro.  It was great.  I love how it puffed up so big, when it was just a little bit of liquid in the bottom of the dish to start out.  Anyway, have a great weekend!

chocolate Chip Pancakes

We had these yummy pancakes for Sunday breakfast. I love these pancakes because you can add anything you want to them. We had chocolate chips in some, blueberries in others, and we've had them with butterscotch chips and other fruit as well.  Unfortunately, we moved yesterday, so  I won't be able to post this delicious recipe at this time. I'll update it as soon as I'm able, but until then, here are the pictures, and we will post on a normal schedule again next week.   We had to move yesterday up to Flagstaff which is why I didn't post yesterday. We give these pancakes a 9. I'm hopefully going to start using Bobby Flay's Throwdown Cookbook in the coming weeks.

Edna Mae's Sour Cream Pancakes

These are a really fast pancake, great for Saturday mornings.  I like them, they are just not fabulous.  I made 12 pancakes from this recipe, and the calories per pancake are 70.  I like that the batter comes together so quickly, but I don't like how eggy they taste.  The boys said it tasted like they were eating eggs flavored with other things, but that it was okay because they like eggs.  They gave them a 7, and I gave them a 6, because I really don't like eggs :).  This recipe is in the Pioneer Woman's first cookbook, and here it is:
Edna Mae's Sour Cream Pancakes

1 c sour cream
7 T flour
1T sugar
1/2 t salt
1 t baking soda
2 eggs
1/2 t vanilla

Heat up a griddle.  Mix sour cream, flour, sugar, salt, and baking soda together.  Stir until mostly combined.  In a small bowl mix together the eggs and vanilla, then add that gently to the sour cream mixture, and stir until mostly combined.  Cook over medium heat.  Serve with desired toppings.


Tomorrow we're finally having some lamb, but probably not the risotto...sigh...maybe I'll be in the mood to cook risotto soon :)

Oatmeal Cinnamon Roll Pancakes

We had some Oatmeal Cinnamon Roll Pancakes, and these were very good.  The boys gave them an 8, and I gave them a 9.  I thought the flavor, and the relative healthiness of the pancake made them something special.  I didn't make the glaze, these were sweet enough with out the extra sugar and calories, although I am sure they would be even better with it :).  I made 18 pancakes with this recipe, and each pancake was 131 calories.  The only tip I have is to make sure to not over cook this, the sugar carmelizes very quickly and if not watched closely these will burn.  Great breakfast or brunch!

Tomorrow we're having that lamb and risotto, I hope :)

Whole Wheat Pumpkin Pancakes

We had Whole Wheat Pumpkin Pancakes this morning.  I had to change the recipe just a little, I didn't have any flax seeds, and I added a lot more coconut milk than the 1 3/4 c milk the recipe called for.  These were thick, hearty, semi-healthy pancakes, since I added 1 T brown sugar instead of the 1 T flax seed, they aren't super healthy, but they tasted good.  Noah gave them a 9, and Owen and I gave them an 8.  The baking powder flavor was a little strong for me, but they did rise nicely.  Anyway, these are a healthy alternative to the usual pancake.  Notice the butter and no syrup.  I still don't like syrup, so I eat my pancakes/waffles/ french toast with just butter.  Weird I know but delicious :)
Tomorrow we're having a chicken dish.

Coconut Cake Pancakes

This morning we had Coconut Cake Pancakes.  These were yummy, especially the bananas.  I made 21 pancakes out of the batter, and so with that number our calories were 89 calories/pancake with bananas.  We gave the bananas a 9 and the pancakes an 8.  I like that the recipe uses whole wheat flour as well as all purpose flour, and I like that this was very easy.  Instead of using one egg white and one egg, I just used two eggs, and I used less maple syrup in the banans and added 1 T of brown sugar to the bananas.  Also, I left out the oil entirely.  These were a great Saturday morning breakfast, and we'll definitely have them again!  We're trying a carnitas pizza from the Pioneer Woman's second cookbook tonight.
