The Diner Cookbook's Crab Avocado Sandwich

So although we didn't all love this meal, Owen really liked it and wanted me to blog it.  I found this cookbook in the Diner Cookbook and I wanted to try it because it was a crab salad that didn't use mayonnaise, but everyone else wanted mayo, so oh well :).  Each sandwich was 304 calories, and Owen and I gave it an 8, Noah gave it a 7, and Aaron gave it a 6.  Here's what I did:

1/4 c sour cream
2 T lemon juice
1 t dill
1/4 t dry mustard
salt and pepper to taste
1 lb krab
sliced bread, toasted, with butter
1 ripe avocado, peeled and sliced

Mix together the sour cream, lemon juice, dill, dry mustard, salt, pepper and krab.  Toast your bread, spread it with butter if desired, and slice the avocado and assemble the sandwich.  Eat :)

The Border Cookbook's Crab Enchiladas

This was a fast, easy meal that we all enjoyed.  It wasn't anyone's favorite, but we all gave it a solid 8.  This came together in just a few minutes, and then baked for 25 minutes in the oven, so not a lot of work.  Each serving was two enchiladas, and the calories were 365 per serving.  Here's what I did.

2 T butter
1/2 onion chopped
1 garlic clove, minced
1/2 jalapeno, diced
1/2 t dried espazote
8 oz cream cheese, at room temperature
1 lb Krab (use real crab if you can afford it :))
12 corn tortillas
cooking spray
Salsa verde
1/2 c grated cheese
cilantro for top

Preheat the oven to 350.  Spray a 9x13 pan.
Melt the butter and add in the onion, garlic, jalapeno and espazote.  Saute briefly, then add in the cream cheese and cook until the cream cheese is soft.  Mix in the crab and set aside.  Spray the tortillas with cooking spray, then warm them in the oven for 3 minutes.  When all the tortillas are soft and warm, spoon the crab mixture in, roll them and put them in the pan seam side down.  Top with the salsa verde, cilantro and grated cheese.  Bake for 25 minutes, then serve with desired toppings.

Absolutely Avocado's Mexican Chopped Salad with Crab

This was going to be a side dish salad from the Absolutely Avocados cookbook, but the recipe I was going to make with the Krab didn't happen because I forgot one of the main ingredients, sigh :).  Anyway, I changed this recipe a little to make it a main dish, and it was super delicious.  We all gave this a 9, it was super great.  Each serving was 578 calories, and it came together really quickly.  Here's what I did:

2 avocados, peeled and chopped
4 ears corn, cooked and cooled, then cut off the cob
3 scallions, chopped
1 15 oz can black beans, rinsed and drained
1 red bell pepper, diced
1 bag romaine lettuce, chopped
chopped cilantro, to taste
1/2 c olive oil
1 lime, juiced
1 t honey
1 T mayonnaise
1/2 t salt
5 oz pepper jack cheese, grated
1 lb Krab (fake crab meat, use the real stuff if you can :))

Mix together the olive oil, lime juice, honey, mayonnaise, and salt.  Set aside.  Mix together the avocados, corn, scallions, black beans, bell pepper, lettuce and cilantro.  Add in the cheese and Krab, then toss with the dressing and serve.

Yum, yum, yum!  This was a great, cool salad, and a really good summer meal, even if we had it in October :).
