Dave Lieberman's Salmon with Three Bean Salad

I love this easy, fresh fish recipe, it really hit the spot for me, and everyone else seemed to enjoy it as well, just maybe not as much as me :).  I found this recipe on foodnetwork.com, and here is the actual link.  I used black beans instead of navy beans, and I baked the salmon in a 400 degree oven for about 15 minutes, since Aaron likes his salmon well done.  Cook less time for a medium rare, about 10 minutes or so.  Each serving was 420 calories for six servings with the avocado on top.  Noah gave this a perfect 10, I gave it a 9, Owen and Aaron gave it a 7.  This is fresh and delicious!

Michael Symon's Salmon with Avocado Salad

I absolutely loved this fish, and although no one else liked it as well as I did, it was still really well liked around here.  Everyone else thought it was a little spicy, but I love me some spice :).  I gave it a perfect 10, Noah and Aaron gave it an 8, and Owen gave it a 7.  I found this recipe in Michael Symon's 5 in 5 cookbook, and each serving was 448 calories for 5 servings.  Here's what I did:

2 lbs salmon
salt and pepper
1 T chipotle powder (I used a little less)
grated zest and juice of 2 limes
1/2 onion thinly sliced
1/4 c chopped fresh cilantro leaves
4 T olive oil
1 avocado, sliced

Preheat oven to 400.  Season the salmon on both sides with salt, pepper and chipotle powder.  Cook in the oven until the fish has reached desired doneness, we cooked ours about 15 minutes.
Stir together the lime juice and zest, onion, cilantro, oil and salt.  Add the avocado and toss gently, then top the salmon with the avocado salad when serving.  Yummy yummy :).

Michael Symon's Salmon Cooked In Foil

This is such an easy way to make fish, and it took almost no prep or time.  This 5 in 5 cookbook by Michael Symon has been great for us, the recipes always turn out well, and it allows us to have great food in almost no time.  I love that!  This received an 8 from all of us, and we didn't have any of the liquid the fish cooked in, so the calories are a little lower than what I figured out, 493 per serving. Here's what to do:

5 4 oz salmon fillets
salt and pepper to taste
5 sprigs rosemary
1 t crushed red pepper flakes
1/2 c olive oil
2 garlic cloves, minced
2 c dry white wine or broth or salted water
1 c torn fresh basil leaves

Preheat the oven to 450°.  Season both sides of the salmon with salt and pepper, then lay each piece onto a sheet of foil.  Top with rosemary, salt, red pepper, and a little olive oil, garlic and then season again with salt and pepper.  Form a pouch with the foil, and before serving, pour a little wine into each bundle.  Seal the packets and place on a cookie sheet.  Cook for about 5 minutes, more if desired.  Remove from the liquid, top with basil, and serve.

Picky Palate's Salmon over Garlic Corn

This is a superdy duperdy delicious meal ;).  We loved it, Noah and Aaron both saying it was their favorite fish ever.  Way to go Picky Palate!  This was such an easy dinner, as well as great tasting, we will have this again, and I love that it was such a hit.  Aaron and I gave it a 9, Noah gave it a perfect 10, and Owen gave it an 8.  We used a smaller piece of salmon than the recipe called for, so the calories for our dinner were 288 per serving.  Here's what I did:

salt
Tobasco Sauce
3/4 t paprika
2 T maple syrup
about 1 lb of salmon
2 T olive oil
1 can corn, drained
2 cloves garlic, minced
2 T cilantro

Preheat the oven to 450.  Line a cookie sheet with parchment paper.  Mix together some salt to taste, and the paprika.  Coat the fish with the salt and paprika, then put on a little tobasco sauce and then top with the maple syrup.  Place in the oven and cook for 12-15 minutes.  Meanwhile, heat the olive oil in a skillet and then add the garlic and cook for about a minute.  Add in the corn, cilantro, some more salt, and tobasco.  Stir, then serve with the fish.


Easy and delicious!

Salmon with Garlic and Rosemary

 
 
This is a very simple, healthy and good weeknight meal.  I like this a lot because it takes so little time and tastes great.  I can't remember where I found this recipe, but it is so good and easy.  I added some lemon juice to it this time, and we liked it.  The calories are 186/serving, or about 190 if adding lemon juice.  I also have to cook this longer than it says, at least 20 minutes.  Aaron gave it a 7, so did Owen, and Noah and I gave it an 8.
 
Rosemary and Garlic Roasted Salmon
 
  • 3 cloves Garlic (I used a little more)
  • 2 sprigs Rosemary, About 1 Tablespoon Chopped   
  • 2 pounds Salmon Fillet (167/4oz)
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 pinches Sea Salt
  • 1 pinch Ground Pepper

Preparation Instructions

Preheat oven to 425°.
Peel and chop garlic. Set aside.
Chop the rosemary. Set aside.
Place salmon on a baking sheet covered with foil.
Evenly distribute olive oil on salmon. Sprinkle salt and pepper over the fillet. Next, add the rosemary and garlic and lightly press into the salmon.
Place in the oven for 10 minutes or until the salmon is tender and flaky. Serve and enjoy!
